aero bubble rainbow cake - recipe

It's been one of those feel sorry for yourself days, and what better way to cheer yourself up then by baking a cake! And not just any cake, a rainbow cake, with aero bubbles inside, and a mint chocolate topping. Sound right up your street? Well here's how to make it:
Ingredients: 
CAKE
6oz Stork
6oz Caster Sugar
3 Medium eggs
6oz Self Raising Flour
COLOUR & FLAVOUR
Four or Five different food colouring or pastes
Mint (or orange) Aero bubbles
TOPPING
Milk, white or dark chocolate
Peppermint flavouring.
Aero bubbles to decorate.
METHOD:
Preheat your oven to 180 degrees. We're going to start by making a basic 6/6/6 cake, this means 6oz of butter, sugar and flour, and then three eggs. If you want to make an even bigger cake, you could make an 8/8/8 which is 8oz of butter,sugar and flour, then four eggs. 
First, cream the sugar and butter together in a bowl, then mix in one egg at a time. Sift the flour in and use a metal spoon to mix it all together until you have a thickish cake batter.
Next split the batter into four or five bowls and mix in your food colourings. Take your aero bubbles in a bowl and pour a little flour over them all. Make sure to get flour all over them as this will prevent them from sinking to the bottom of your cake while baking, this is also a great technique for when using chocolate chips!
Split the aero bubble evenly into each mix making sure you have some to decorate the cake afterwards. Spoon the colours one at a time into your cake tray making sure to swirl where the colours meet for a marbled look. Or you can layer them on top of each other for a fully rainbow design. I chose to marble them together to make the cake extra colourful inside. 
Put it in the oven for 20 minutes then check if it's cooked by poking a knife or kebab stick into the centre and making sure it pulls out dry, do be aware that there are melted aero balls in there, so there may be a bit of melted chocolate! If it's not quite done, leave for another 5 minutes. 
Once your cake has cooked, remove from the oven and let it cool completely before doing the topping. Fill a pan with boiling water and set to simmer on the stove, break your chocolate up into a glass bowl and place on top of the pan. I used one bar of milk chocolate, and a small bar of dark mint chocolate that I got from Aldi. I also added one drop of peppermint flavouring to make the chocolate extra minty (it tasted of after eight mints) Once this has fully melted, carefully cover your entire cake, making sure to cover the sides. 
I decorated the top with some more aero bubbled then put it in the fridge to 'set' the chocolate. Once dry, ENJOY! Don't worry if a bit of the cake around the aero bubbles is a bit gooey, it's cooked! The bubbles make the cake slightly minty and the whole thing tastes delicious!
